So, I’ll confess – I’m not a big salad fan. But this dressing makes eating raw foods a whole lot easier – fantastic flavour and so, so easy! Just be mindful that you may need a mint or two after lunch if you have it at work (garlic breath!!).
- Avocado & Lime Salad Dressing
- 1 ripe avocado
- juice from 1 lime
- 1 clove garlic
- 2 tbsp vinegar
- 2 tbsp honey
- 1/8 tsp salt
- 1/3 c. + 2 tbsp water
Cut avocado in half, remove pit and squeeze the insides into a thermomix or blender. Make sure the Avocado comes out easily – if it doesn’t, it probably isn’t ripe enough.
Add the remaining ingredients.
Blend until smooth and creamy, adjusting water to achieve your preferred consistency.
